- ¾ pound smoked sausage (andouille or beef)
- 1 medium, thinly sliced yellow onion
- ½ cup pickled jalapeños or banana peppers
- 2 tablespoons neutral oil (canola or vegetable)
- 2 wedges per person fresh lime or lemon wedges
