Ingredients

  • 1 pound smoked boudin sausage
  • ¾ pound smoked sausage (andouille or beef)
  • 1 medium, thinly sliced yellow onion
  • ½ cup pickled jalapeños or banana peppers
  • 2 tablespoons neutral oil (canola or vegetable)
  • 2 wedges per person fresh lime or lemon wedges

Instructions

    Slice boudin and sausage into 1/4-inch-thick rounds, keeping skins intact.

    Heat oil in a large skillet over medium-high heat until shimmering, about 60 seconds.

    Sear sausage rounds in a single layer without stirring until golden brown, 2–3 minutes per side.

    Push sausage to the side, add sliced onion to the hot spot, and sauté until it softens and caramelizes, 3–4 minutes.

    Toss sausage and onion together, then transfer to a serving plate with pickled peppers alongside.
