Ingredients
- 1.5 lb beef stew meat
- 2 medium potatoes
- 2 medium onions
- 2 tbsp tomato paste
- 1 tsp paprika
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp olive oil

Cut the 1.5 lb beef stew meat into 1-inch cubes and pat dry with paper towels. Season with 1 tsp salt and 1/2 tsp black pepper.

Heat 2 tbsp olive oil in a large pot over medium-high heat. Add the beef in a single layer and sear until browned on all sides, about 5-7 minutes. Work in batches if needed to avoid crowding.

Add the 2 sliced onions and cook, stirring, until softened and golden, about 5 minutes. Stir in 2 tbsp tomato paste and 1 tsp paprika, cooking for 1 minute until fragrant.

Add 2 cups of water and bring to a boil. Reduce heat to low, cover, and simmer until the meat is tender, about 30 minutes.

Add the 2 peeled and cubed potatoes and continue simmering, covered, until the potatoes are fork-tender, about 15-20 minutes. Uncover and simmer for 5 more minutes to thicken the sauce if needed.

Taste and adjust seasoning with salt and pepper. Serve hot, spooned over rice or with crusty bread.
