Ingredients
- 1.5 lb chicken breast
- 1 head broccoli
- 3 cups cooked rice
- ½ cup soy sauce
- ¼ cup brown sugar
- 2 tbsp cornstarch
- 2 tbsp vegetable oil
- ¼ cup water

In a small bowl, whisk the 1/2 cup soy sauce, 1/4 cup brown sugar, 2 tbsp cornstarch, and 1/4 cup water until smooth. Set aside.

Cut the 1.5 lb chicken breast into bite-size pieces. Heat 1 tbsp of the vegetable oil in a large skillet over medium-high heat.

Add the chicken in a single layer and cook without stirring until browned on one side, about 3 minutes. Flip and cook until no longer pink, about 4 more minutes. Transfer to a plate.

Add the remaining 1 tbsp oil and the broccoli florets to the skillet. Stir-fry until bright green and crisp-tender, about 4 minutes.

Return the chicken to the skillet. Pour in the sauce and stir constantly until it thickens and coats everything, about 2 minutes.

Serve the teriyaki chicken and broccoli over the 3 cups cooked rice. Add a sprinkle of sesame seeds or sliced green onion if you have them.
