Ingredients
- 1.25 cups all-purpose flour
- ½ cup cold butter, cubed
- 1 egg yolk
- 1 pinch salt and pepper
- 2 lbs yellow onions, sliced thin
- 1 cup crème fraîche
- 2 eggs
- ¼ tsp whole nutmeg, freshly grated
- 4 oz smoked bacon, diced
- 2 sprigs fresh thyme
- 2 tbsp olive oil

Mix flour and salt. Cut in cold butter until mixture resembles coarse breadcrumbs.

Add egg yolk and 3 tablespoons cold water. Mix until dough just comes together.

Wrap in plastic and chill 30 minutes.

Heat olive oil in a large skillet over medium. Add onions, thyme, salt, and pepper.

Cook 40–50 minutes, stirring occasionally, until onions are deeply golden and sweet.

Remove thyme. Taste and adjust seasoning.

Preheat oven to 400°F. Roll pastry into a 10-inch tart pan; prick base with a fork.

Bake blind 8 minutes until just set; remove from oven and reduce heat to 375°F.

Cook bacon in a small skillet until crisp, ~5 minutes. Drain on paper towels.

Whisk crème fraîche, eggs, nutmeg, salt, and pepper in a bowl until smooth.

Spread caramelized onions in pastry shell. Pour custard over. Scatter bacon on top.

Bake 25–30 minutes until custard is set but slightly jiggly in the center.

Cool 10 minutes. Slide onto a plate and serve warm or at room temperature.
