Ingredients

  • 1 cup whole milk
  • 3 count egg yolks
  • ¼ cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon unsalted butter
  • ½ teaspoon vanilla extract
  • 1 count pre-made 9-inch puff pastry shell
  • 2 cups fresh mixed berries and fruit
  • ⅓ cup apricot jam
  • 2 tablespoons water

Instructions

    Pour milk into a medium saucepan.

    Heat milk over medium heat until small bubbles form at the edges.

    Whisk egg yolks with sugar in a bowl until pale, about 1 minute.

    Whisk cornstarch into the egg mixture until no lumps remain.

    Slowly pour hot milk into egg mixture while whisking constantly.

    Pour mixture back into the saucepan through a fine sieve.

    Cook over medium heat, whisking continuously until thickened.

    Remove from heat and whisk in butter and vanilla extract.

    Press plastic wrap directly onto surface and chill for 20 minutes.
