Ingredients
- 2 tbsp tamarind paste
- 4 cups water
- 1 medium onion
- 2 whole red chili peppers
- 1 tsp salt
- ½ cup cilantro

In a pot, bring 4 cups water to a boil. Add 2 tbsp tamarind paste and stir until dissolved.

Thinly slice 1 medium onion and add to the pot. Reduce heat to medium-low and simmer for 10 minutes.

Slice 2 red chili peppers (remove seeds for less heat) and add to the soup. Simmer for another 5 minutes until the broth is fragrant and slightly thickened.

Stir in 1 tsp salt, adjusting to taste. The soup should be tangy and savory.

Chop 0.5 cup cilantro and stir into the soup just before serving. Ladle into bowls and serve hot.
