Ingredients

  • 1 lb ground beef
  • 1 box (8.5 oz) cornbread mix
  • 1 can (15 oz) tomato sauce
  • 1 cup shredded cheddar cheese
  • 1 tbsp chili powder
  • ¼ cup fresh cilantro

    Preheat oven to 400°F. In a 10-inch oven-safe skillet over medium-high heat, cook 1 lb ground beef, breaking it up, until browned, about 5-7 minutes. Drain excess fat.

    Stir in 1 can tomato sauce and 1 tbsp chili powder. Simmer until slightly thickened, about 2-3 minutes. Spread meat mixture evenly in skillet.

    Prepare 1 box cornbread mix according to package directions (usually adding egg and milk). Pour batter over meat, spreading to edges.

    Sprinkle 1 cup shredded cheddar cheese over the batter. Bake until cornbread is golden and a toothpick comes out clean, about 15-18 minutes.
