Ingredients
- 2 cups basmati rice
- 1.5 pounds chicken thighs
- 1 large onion
- 2 medium tomato
- 1 cup plain yogurt
- 1 teaspoon turmeric
- 2 whole green chilies
- 3 tablespoons vegetable oil

Rinse the 2 cups basmati rice in cold water until clear, then soak in fresh water for 20 minutes. Drain well.

Heat 3 tbsp vegetable oil in a large pot over medium-high. Add 1 sliced onion and cook, stirring, until golden and soft, about 8 minutes.

Add 1.5 lbs chicken thighs (bone-in, skin removed) and 1 tsp turmeric. Sear until the chicken is browned on all sides, about 6 minutes total.

Add 2 chopped tomatoes and 2 whole green chilies (slit lengthwise). Cook until tomatoes break down into a thick sauce, about 5 minutes.

Pour in 2 cups water and bring to a boil. Season with salt and pepper. Add the drained rice, stir gently, and reduce heat to low.

Cover and cook until rice is tender and liquid is absorbed, about 15 minutes. Let rest off heat for 5 minutes, then fluff with a fork.
