Ingredients
- 1.5 lb pork shoulder
- 2 tbsp achiote paste
- ½ cup pineapple juice
- 8 small corn tortillas
- 2 cups shredded cabbage
- 1 cup guacamole
- ½ cup salsa
- ¼ cup fresh cilantro

Slice the 1.5 lb pork shoulder into thin strips, about 1/4-inch thick.

In a bowl, mix the 2 tbsp achiote paste with the 1/2 cup pineapple juice until smooth. Add the pork and toss to coat. Marinate for at least 30 minutes or up to overnight.

Heat a large skillet over medium-high heat. Add the marinated pork in a single layer (work in batches if needed) and cook until browned and cooked through, about 8-10 minutes per batch.

Warm the 8 corn tortillas in a dry skillet or microwave until soft and pliable.
