Ingredients
- ½ lb ground beef
- ¼ lb chorizo, casing removed
- 2 medium potatoes, peeled and diced small
- ½ medium onion, diced
- 2 whole chiles secos (guajillo or ancho), seeds removed and torn
- 6 whole corn tortillas
- 1 handful fresh cilantro and white onion, chopped, for serving
- 1 whole lime

Heat 2 tbsp oil in a large skillet over medium-high. Add potatoes, cook without stirring for 4 minutes until golden on one side.

Stir potatoes, add onion, cook 3 minutes until onion softens. Push to the side of the pan.

Add ground beef and chorizo to the center, breaking up with a spoon. Cook 5 minutes until no pink remains.

Toast torn chiles in a small dry skillet over medium for 90 seconds until fragrant. Soak in warm water 2 minutes, then blend smooth with 3 tbsp soaking liquid.

Pour chile sauce into the meat mixture, stir to coat. Simmer 2 minutes.

Warm tortillas in a dry skillet 30 seconds per side until pliable.

Divide meat and potato mixture among tortillas. Top with cilantro, onion, and a squeeze of lime. Serve immediately.
