Ingredients

  • 1.25 lb beef ribeye or sirloin, sliced thin
  • 3 tbsp soy sauce
  • 1 tbsp ginger, minced
  • 2 cloves garlic, minced
  • 1.5 tbsp brown sugar
  • 8 count corn or flour tortillas
  • 2 tbsp gochujang
  • ¼ cup sour cream
  • 1 cup sliced scallions, cucumber & radish (for toppings)

Instructions

    Combine soy sauce, ginger, garlic, and brown sugar in a bowl.

    Add beef and toss to coat evenly. Let sit 5 minutes.

    Heat 1 tbsp oil in a large skillet over medium-high until shimmering.

    Add beef in a single layer. Sear 2 minutes without stirring until browned.

    Flip and cook 1–2 minutes until cooked through. Edges should caramelize.

    Stir gochujang and sour cream together until smooth and creamy.

    Warm tortillas 30 seconds per side in the skillet.

    Fill each tortilla with beef, drizzle gochujang crema, top with vegetables.
