Ingredients

  • 2 large pita bread
  • 2 cups cooked chicken or lamb
  • 1 cup plain yogurt
  • 1 cup tomato sauce
  • 3 tablespoons olive oil
  • 2 tablespoons pine nuts
  • 1/4 cup chopped fresh parsley
  • 1/2 teaspoon salt

Instructions

    Preheat oven to 400°F. Cut pita into triangles, toss with 1 tbsp olive oil, and spread on a baking sheet.

    Bake pita for 8-10 minutes until golden and crispy. Set aside.

    In a skillet, heat remaining olive oil over medium. Add pine nuts and toast until golden, about 2 minutes. Remove and set aside.

    In a saucepan, warm the tomato sauce over medium heat. Season with salt and simmer for 5 minutes.

    In a bowl, whisk the yogurt with a pinch of salt until smooth. If too thick, add a splash of water.

    Arrange crispy pita on a serving plate. Top with cooked meat, then drizzle with tomato sauce.

    Spoon the yogurt over the top, sprinkle with toasted pine nuts and chopped parsley. Serve immediately.
