- 12 oz pasta
- 2 medium potatoes
- 4 slices bacon
- 8 oz Swiss cheese
- 1 cup heavy cream
- 1 small onion
- 1 tsp salt
- ½ tsp black pepper

Bring a large pot of salted water to a boil. Add the 12 oz pasta and 2 medium diced potatoes, cook until pasta is al dente and potatoes are tender, about 10-12 minutes. Reserve 1 cup pasta water, then drain.

While pasta cooks, chop 4 slices bacon and 1 small onion. Cook in a large skillet over medium heat until bacon is crispy and onion is golden, about 8 minutes. Remove from heat.

In the same skillet, add 1 cup heavy cream and 8 oz shredded Swiss cheese. Stir over low heat until cheese melts into a smooth sauce, about 3-4 minutes. Season with 1 tsp salt and 0.5 tsp black pepper.

Add the drained pasta and potatoes to the skillet with the cheese sauce. Toss to coat, adding reserved pasta water a splash at a time if needed for a creamy consistency.
