Ingredients
- 1 cup pearl barley
- 4 cups vegetable broth
- 1 medium onion
- 1 medium carrot
- ½ cup shredded Swiss cheese
- 1 handful spinach leaves

In a large pot, combine 1 cup pearl barley and 4 cups vegetable broth. Bring to a boil over high heat, then reduce to a simmer.

Add 1 diced onion and 1 diced carrot to the pot. Cook until the barley is tender and the vegetables are soft, about 20 minutes.

Stir in 1 handful of spinach leaves and cook until wilted, about 2 minutes. Season with salt and black pepper to taste.
