  • 6 cups water
  • ½ cup sugar
  • 1 cup glutinous rice flour
  • ½ cup warm water
  • ½ cup coconut milk
  • 1 medium mango

    Rinse the 1 cup dried red beans and soak in water overnight, or quick-soak by boiling 2 minutes then resting 1 hour.

    Drain beans, place in a pot with 6 cups water, bring to a boil, then simmer partially covered until beans are tender, about 1.5 hours.

    Once beans are soft, stir in 0.5 cup sugar and simmer 10 minutes more, until slightly thickened.

    In a bowl, mix 1 cup glutinous rice flour with 0.5 cup warm water, stirring until a soft dough forms.
