Ingredients

  • 1 lb ground beef
  • ½ cup breadcrumbs
  • 1 large egg
  • 1 lb potatoes
  • 1 medium cucumber
  • 1 cup cherry tomatoes

Instructions

    In a large bowl, mix 1 lb ground beef, 0.5 cup breadcrumbs, 1 egg, 1 tsp salt, and 0.5 tsp black pepper until just combined. Form into 12 meatballs.

    Heat 2 tbsp vegetable oil in a large skillet over medium-high heat. Add the meatballs and cook, turning occasionally, until browned on all sides and cooked through, about 10 minutes.

    Meanwhile, place 1 lb potatoes in a pot, cover with salted water, and bring to a boil. Cook until fork-tender, about 15 minutes. Drain and keep warm.

    Slice 1 cucumber and halve 1 cup cherry tomatoes. Serve the meatballs with the potatoes and fresh vegetables, with plain yogurt or lingonberry jam on the side if you like.
