- ½ cup breadcrumbs
- 1 large egg
- 1 lb potatoes
- 1 medium cucumber
- 1 cup cherry tomatoes

In a large bowl, mix 1 lb ground beef, 0.5 cup breadcrumbs, 1 egg, 1 tsp salt, and 0.5 tsp black pepper until just combined. Form into 12 meatballs.

Heat 2 tbsp vegetable oil in a large skillet over medium-high heat. Add the meatballs and cook, turning occasionally, until browned on all sides and cooked through, about 10 minutes.
