Ingredients

  • 6 cloves garlic cloves, minced
  • 2 stalks lemongrass stalk, white part only, minced
  • 1 medium shallot, minced
  • 3 tbsp fish sauce
  • 2 tbsp honey
  • 2 tbsp lime juice
  • ½ tsp black pepper
  • 4 chops (8 oz each) pork rib chops (bone-in), 1-inch thick
  • 2 tbsp olive oil
  • 1 tsp salt
  • 2 limes lime wedges
  • ¼ cup fresh cilantro, chopped

Instructions

    Mince garlic, lemongrass (white part only), and shallot very fine.

    Whisk garlic, lemongrass, shallot, fish sauce, honey, lime juice, and pepper in a bowl.

    Pat pork chops dry with paper towels. Season all sides with salt.

    Place chops in a shallow dish. Pour marinade over, turning to coat all sides.

    Cover and refrigerate 30 minutes. Remove 10 minutes before grilling.

    Heat grill to medium-high (about 450°F). Lightly oil the grates.

    Brush chops with olive oil. Remove excess marinade with tongs.

    Grill chops 4–5 minutes per side without moving. Meat should pull back from bone slightly.

    Transfer to a plate. Rest 3–5 minutes; juices will redistribute.

    Squeeze lime juice over chops. Scatter cilantro on top.

    Serve immediately with lime wedges and steamed rice on the side.
