Ingredients

  • 4 chops (about 1.5 lbs) pork chops (1 inch thick), boneless
  • 4 cloves garlic, minced
  • 3 tbsp fish sauce
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • ½ tsp black pepper
  • 1 tbsp olive oil

Instructions

    Stir together minced garlic, fish sauce, honey, soy sauce, black pepper, and olive oil in a bowl.

    Pat pork chops dry and place in a shallow dish. Pour marinade over chops, turning to coat both sides.

    Marinate at room temperature for 15 minutes, or refrigerate up to 4 hours.

    Heat a grill or cast iron skillet over medium-high heat until it shimmers, about 2 minutes.

    Remove chops from marinade, letting excess drip off. Reserve marinade. Grill chops 4–5 minutes per side without moving.

    Brush chops with reserved marinade. You'll see caramelized edges and an internal temp of 145°F.

    Rest chops on a plate for 2 minutes. Serve hot with jasmine rice and pickled vegetables.
