Sugarcane Juice

A refreshing glass of freshly pressed sugarcane juice, served over ice with a squeeze of lemon and a sprig of mint. This classic street drink is sweet, citrusy, and incredibly cooling.

Ingredients

  • 2 large sugarcane stalks
  • 1 medium lemon
  • 1 cup ice cubes
  • 6 leaves fresh mint leaves

Instructions

    Peel the 2 large sugarcane stalks and cut them into pieces that fit your juicer. If you don't have a juicer, you can grate the cane and squeeze the pulp through a clean cloth.

    Run the sugarcane pieces through a juicer to extract the juice. You should get about 1 cup of juice; if it's too thick, strain it through a fine mesh sieve.

    Fill a tall glass with the 1 cup ice cubes. Pour the sugarcane juice over the ice.

    Squeeze the juice of the 1 lemon into the glass and stir well. Taste and add more lemon if you prefer a tarter drink.

    Garnish with the 6 mint leaves and serve immediately. For extra flavor, rub the mint leaves between your fingers before adding to release their oils.
