Ingredients
- 4 whole squid tubes
- ½ pound ground beef
- ½ cup breadcrumbs
- 1 small onion
- 1 teaspoon dried oregano
- 2 cups lettuce
Instructions
- 1
Finely chop the 1 small onion. In a bowl, mix the chopped onion, 0.5 lb ground beef, 0.5 cup breadcrumbs, and 1 tsp dried oregano until just combined.
- 2
Stuff the mixture into the 4 squid tubes, filling each about three-quarters full. Secure the open ends with toothpicks if needed.
- 3
Heat 2 tbsp olive oil in a skillet over medium-high heat. Add the stuffed squid and cook until golden brown on all sides, about 5-7 minutes total.
- 4
Reduce heat to medium-low, cover, and cook until squid is tender and filling is cooked through, about 8-10 minutes. The squid should be opaque and firm to the touch.
- 5
Serve the stuffed squid over the 2 cups lettuce leaves, spooning any pan juices over the top.
