- 2 medium chicken breasts
- 2 tbsp olive oil
- 1 whole lemon
- 2 tbsp capers
- 2 tbsp fresh parsley
- 1 pinch salt and pepper

Season the 2 chicken breasts with salt and pepper. Heat 1 tbsp olive oil in a skillet over medium-high until shimmering, about 2 minutes.

Add the chicken and cook until golden brown on both sides and cooked through, about 6-8 minutes per side. Transfer to a plate.

Reduce heat to medium. Add remaining 1 tbsp olive oil, juice of 1 lemon, and 2 tbsp capers. Scrape up any browned bits, simmering until slightly thickened, about 2 minutes.

Return chicken to the pan, spoon sauce over, and sprinkle with 2 tbsp chopped parsley. Serve hot.
