Stuffed Sausages

Ingredients

  • 4 large sausages
  • 4 oz cheddar cheese
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper

    Preheat your grill to medium-high heat, about 400°F. If using a grill pan, place it over medium-high heat for 5 minutes.

    Cut each sausage lengthwise, about 3/4 of the way through, creating a deep pocket. Be careful not to cut all the way through.

    Cut the cheddar into 4 equal strips, each about 1/2 inch thick. Stuff one strip into each sausage pocket, pressing it down gently.

    Brush the stuffed sausages with the 1 tbsp olive oil and season with the 1/2 tsp salt and 1/4 tsp black pepper.

    Place the sausages on the grill, cut side up. Cook for 5-6 minutes, until the bottoms are browned and have grill marks.

    Flip the sausages carefully and cook for another 5-6 minutes, until the cheese is melted and bubbling and the sausages are cooked through (internal temperature 160°F).

    Remove from the grill and let rest for 2 minutes before serving. The cheese will be very hot—serve with a side of your choice.
