Ingredients
- 3 cups cooked rice
- 1 cup shredded mozzarella
- 1 cup frozen peas and carrots
- ½ cup cooked sausage
- 2 large egg
- 1 cup breadcrumbs
- 1 cup marinara sauce
- 2 cups vegetable oil

In a large bowl, combine 3 cups cooked rice, 1 cup shredded mozzarella, 1 cup frozen peas and carrots, and 1/2 cup chopped cooked sausage. Mix well.

Beat 2 eggs in a shallow dish. Place 1 cup breadcrumbs in another shallow dish.

Shape the rice mixture into 12 balls, about 2 inches wide. Press a small cube of mozzarella into the center of each ball and seal the rice around it.

Dip each ball into the beaten egg, then roll in breadcrumbs to coat evenly.

Heat 2 cups vegetable oil in a deep pot to 350°F. Fry the rice balls in batches, turning occasionally, until golden brown and crispy, about 4-5 minutes.

Drain on paper towels. Serve warm with 1 cup marinara sauce for dipping.
