Ingredients

  • 8 oz strozzapreti pasta
  • 1 can (14 oz) canned whole tomatoes
  • 8 oz fresh mozzarella (fior di latte)
  • 2 cloves garlic
  • ½ cup, packed fresh basil
  • 3 tbsp extra-virgin olive oil
  • 1 to taste salt and black pepper

Instructions

    Boil salted water in a large pot, then add strozzapreti and cook until al dente, ~9 minutes.

    Meanwhile, mince garlic. Tear mozzarella into bite-size pieces. Tear basil into rough shreds.

    Heat olive oil in a large skillet over medium. Add garlic and cook 30 seconds until fragrant.

    Pour in canned tomatoes (crush them as you add). Simmer 4 minutes, breaking tomatoes apart.

    Drain pasta, reserve 1 cup pasta water. Toss hot pasta into the tomato sauce, stirring gently.

    Remove from heat. Fold in mozzarella pieces until partially melted. Add basil, season with salt and pepper.

    If sauce looks dry, add pasta water 2 tablespoons at a time. Serve immediately.
