Ingredients

  • 1 lb squid
  • 1 medium onion
  • 3 cloves garlic
  • 2 medium red chili peppers
  • 4 stalks green onions
  • ½ cup tomato sauce

Instructions

    Clean the 1 lb squid and slice into rings; pat dry with paper towels. Slice the 1 medium onion and 2 red chili peppers; mince 3 garlic cloves; cut 4 green onions into 2-inch pieces.

    Heat a large skillet or wok over high heat with 2 tbsp vegetable oil. Add the onion, chili peppers, and garlic; stir-fry until fragrant and onion is translucent, about 2 minutes.

    Add the squid to the skillet in a single layer. Cook undisturbed for 1 minute, then stir-fry until the squid turns opaque and just curls, about 2-3 minutes total. Do not overcook or it will become rubbery.

    Pour in the 1/2 cup tomato sauce and add the green onions. Stir-fry for another 1-2 minutes until the sauce coats everything and is bubbling. Season with salt and pepper to taste.

    Serve immediately over steamed rice if desired.
