Ingredients

  • 1 pound shrimp, peeled and deveined
  • 8 ounces rice noodles
  • 3 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 teaspoon red chili flakes
  • 2 tablespoons fish sauce
  • 1 whole lime, juiced
  • 3 whole green onions, sliced

Instructions

    Soak the 8 oz rice noodles in hot water until pliable, about 10 minutes, then drain and set aside.

    Heat 2 tbsp vegetable oil in a wok or large skillet over high heat until shimmering. Add the 1 lb shrimp and stir-fry until pink and just cooked through, about 3 minutes. Remove shrimp to a plate.

    Add the remaining 1 tbsp oil, 3 minced garlic cloves, and 1 tsp chili flakes to the hot pan. Stir-fry until fragrant, about 30 seconds, being careful not to burn the garlic.

    Add the drained noodles, 2 tbsp fish sauce, and juice of 1 lime to the pan. Toss everything together over high heat for 2-3 minutes until the noodles are well coated and heated through.

    Return the shrimp to the pan along with the 3 sliced green onions. Toss for 1 minute until everything is combined and the shrimp are warmed through.

    Serve immediately, topped with crushed peanuts and fresh bean sprouts if you have them, with extra lime wedges on the side.
