Ingredients
- 1 lb razor clams
- 2 tbsp vegetable oil
- 1 inch ginger
- 4 stalks green onions
- 2 tbsp soy sauce

Rinse the 1 lb razor clams under cold water, scrubbing the shells. Drain well.

Heat 2 tbsp vegetable oil in a wok or large skillet over high heat until shimmering. Add 1 inch sliced ginger and the white parts of 4 green onions (cut into 2-inch pieces); stir-fry until fragrant, about 30 seconds.

Add the clams and stir-fry for 2 minutes, tossing constantly. They will begin to open.

Pour in 2 tbsp soy sauce and continue stir-frying until all clams have opened and are coated in the sauce, about 2 more minutes. Discard any that stay closed.
