- 1 bunch morning glory (water spinach)
- 3 cloves garlic
- 1 medium shallot
- 1 small red chili
- 2 tbsp vegetable oil
- 2 tbsp soy sauce

Wash the 1 bunch morning glory and trim the tough ends, then cut into 3-inch lengths. Peel and slice the 3 garlic cloves and 1 shallot; thinly slice the 1 red chili.

Heat the 2 tbsp vegetable oil in a wok or large skillet over high heat until shimmering. Add the sliced garlic, shallot, and chili; stir-fry until fragrant, about 30 seconds.

Add the morning glory and stir-fry for 1-2 minutes until the leaves begin to wilt and turn bright green.

Pour in the 2 tbsp soy sauce and 2 tbsp water (if needed for steam). Continue stir-frying until the stems are tender-crisp and the liquid is mostly absorbed, about 2-3 minutes. Serve immediately.
