- 3 large eggs
- 3 cloves garlic

- 2 tablespoons vegetable oil

Cut the 1 bitter melon in half lengthwise, scoop out the seeds, and slice into thin half-moons. Toss with 1/4 tsp salt and let sit for 10 minutes, then rinse and pat dry.

Heat 2 tbsp vegetable oil in a wok or large skillet over medium-high. Add 3 minced garlic cloves and 1 sliced onion; stir-fry until fragrant and golden, about 2 minutes.

Add the bitter melon and stir-fry for 3-4 minutes until it starts to soften and turns slightly translucent.

Push the bitter melon to one side. Pour in 3 beaten eggs and scramble them until just set, about 1 minute.
