Ingredients

  • 1 medium bitter melon
  • 3 large eggs
  • 3 cloves garlic
  • 1 small onion
  • 2 tablespoons vegetable oil
  • ½ teaspoon salt

Instructions

    Cut the 1 bitter melon in half lengthwise, scoop out the seeds, and slice into thin half-moons. Toss with 1/4 tsp salt and let sit for 10 minutes, then rinse and pat dry.

    Heat 2 tbsp vegetable oil in a wok or large skillet over medium-high. Add 3 minced garlic cloves and 1 sliced onion; stir-fry until fragrant and golden, about 2 minutes.

    Add the bitter melon and stir-fry for 3-4 minutes until it starts to soften and turns slightly translucent.

    Push the bitter melon to one side. Pour in 3 beaten eggs and scramble them until just set, about 1 minute.

    Mix everything together, season with the remaining 1/4 tsp salt (or to taste), and cook for another minute until the eggs are fully cooked but still tender. Serve hot.
