Ingredients

  • 4 pieces boneless, skin-on chicken thighs
  • 3 tbsp honey
  • 2 tbsp fish sauce
  • 4 cloves garlic, minced
  • 1 whole lime
  • 1 whole fresh chili (optional, sliced thin)

Instructions

    Pat chicken dry with paper towels. Season both sides generously with salt and pepper.

    Heat 1 tbsp oil in a 12-inch skillet over medium-high until shimmering, about 90 seconds.

    Sear chicken skin-side down, undisturbed, until skin is golden brown and crispy, 5–6 minutes.

    Flip chicken. Add garlic, honey, and fish sauce. Cook 4–5 minutes until chicken is cooked through.

    Squeeze lime juice over the pan. Toss chicken to coat in glaze. Serve immediately with fresh chili.
