Ingredients

  • 1.5 lbs baby back pork ribs, cut into 2-rib segments
  • ⅓ cup hoisin sauce
  • 2 tbsp soy sauce
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 2 tbsp sesame seeds (white or black) for garnish

Instructions

    Pat ribs dry with paper towels. Season generously with salt and black pepper on both sides.

    Heat 2 tbsp neutral oil in a 12-inch skillet over medium-high until it shimmers, ~90 seconds.

    Add ribs in a single layer and sear without moving for 3 minutes until caramelized on bottom. Flip and sear another 2 minutes.

    Stir together hoisin, soy sauce, garlic, and ginger in a small bowl. Pour over ribs and toss to coat.

    Reduce heat to medium and simmer 4 minutes, stirring occasionally, until sauce thickens and ribs glisten.

    Slide onto a plate, drizzle any remaining sauce on top, and scatter sesame seeds over. Serve immediately.
