Ingredients

  • 8 oz pork belly
  • 4 oz rice noodles
  • 1 medium carrot
  • 2 stalks green onions
  • 2 tbsp soy sauce
  • ½ tsp black pepper

Instructions

  1. 1

Slice the 8 oz pork belly into thin strips. Place in a steamer basket and steam over boiling water until cooked through and tender, about 15 minutes.

  2. 2

While pork steams, cook the 4 oz rice noodles according to package directions until just tender, then drain and set aside.

  3. 3

Peel and slice the 1 medium carrot into thin rounds. Thinly slice the 2 green onions, separating white and green parts.

  4. 4

In a pot, bring 4 cups water to a boil. Add the 2 tbsp soy sauce, carrot slices, and white parts of green onions. Simmer until carrots are tender, about 5 minutes.

  5. 5

Divide noodles into bowls, top with steamed pork, ladle hot broth over, and garnish with green onion greens and 0.5 tsp black pepper.
