Ingredients
- 2 pounds mussels
- 1 cup dry white wine
- 3 tablespoons unsalted butter
- 3 cloves garlic
- 1 medium shallot
- ¼ cup fresh parsley
- ½ teaspoon salt
- ¼ teaspoon black pepper

Scrub the 2 pounds mussels under cold water, pulling off any beards. Discard any that are open or cracked.

Melt 2 tablespoons of the butter in a large pot over medium heat. Add the 1 sliced shallot and 3 minced garlic cloves, cooking until soft and fragrant, about 3 minutes.

Pour in the 1 cup white wine and bring to a simmer. Season with the 1/2 teaspoon salt and 1/4 teaspoon pepper.

Add the mussels to the pot, cover, and steam until they open, about 5-7 minutes. Shake the pot once halfway through.

Stir in the remaining 1 tablespoon butter and the 1/4 cup chopped parsley until the butter melts and the sauce is glossy.
