Ingredients

  • 2 lb clams
  • 2 inch ginger
  • 4 stalks green onions
  • 1 cup water
  • 1 tbsp soy sauce
  • 1 tsp sesame oil

Instructions

    Scrub the 2 lb clams under cold water, discarding any that are open or cracked. Soak in salted water for 20 minutes to purge sand.

    Peel and thinly slice the 2-inch ginger into matchsticks. Slice the 4 green onions into 2-inch pieces, separating white and green parts.

    In a large pot, combine the 1 cup water, 1 tbsp soy sauce, and 1 tsp sesame oil. Add the ginger and white parts of the green onions.

    Bring the broth to a boil over high heat, then add the clams. Cover and steam until the clams open, about 5-7 minutes, shaking the pot once halfway.

    Discard any clams that remain closed. Stir in the green onion greens and serve immediately in bowls with the broth.

    Optional: add a pinch of red pepper flakes or a splash of rice wine for extra depth.
