Ingredients
- 1.5 lb steak
- 2 lb potatoes
- 1 red bell pepper
- 1 yellow bell pepper
- 1 zucchini
- 8 oz mushrooms
- 3 cloves garlic
- 4 tbsp butter

Peel and chop the 2 lb potatoes into 1-inch chunks. Place in a pot, cover with salted water, and boil until fork-tender, about 15-20 minutes.

While potatoes cook, slice the 1 red and 1 yellow bell pepper, 1 zucchini, and 8 oz mushrooms. Mince the 3 garlic cloves.

Drain the potatoes and return to the pot. Add 2 tbsp butter and mash until smooth. Season with salt and pepper to taste; keep warm.

Season the 1.5 lb steak generously with salt and pepper. Heat a large skillet over high heat, add the steak, and sear until browned and cooked to your liking, about 4-5 minutes per side for medium-rare. Rest on a plate.

In the same skillet, add the remaining 2 tbsp butter and the sliced vegetables. Sauté over medium-high heat until tender and lightly charred, about 6-8 minutes. Add the minced garlic in the last minute.

Slice the rested steak against the grain. Serve with the mashed potatoes and sautéed vegetables, spooning any pan juices over the top.
