Ingredients
- 2 large russet potatoes
- 3 tbsp vegetable oil
- 1 tsp salt
- ½ tsp black pepper
- 1 lb ribeye steak
- 1 tbsp butter

Cut the 2 large potatoes into thin sticks and pat dry with paper towels. Toss with 2 tbsp vegetable oil and 1/2 tsp salt.

Spread the potatoes in a single layer on a baking sheet. Bake at 425°F for 20-25 minutes, flipping once, until golden and crispy.

Pat the 1 lb steak dry and season both sides with the remaining 1/2 tsp salt and 1/4 tsp black pepper.

Heat the remaining 1 tbsp vegetable oil in a cast-iron skillet over high heat until shimmering, about 2 minutes.

Place the steak in the skillet and cook for 3-4 minutes per side for medium-rare, until a brown crust forms and the internal temperature reaches 130°F.

Add the 1 tbsp butter to the skillet and tilt to baste the steak for 1 minute. Transfer the steak to a cutting board and let rest for 5 minutes.

Slice the steak against the grain and serve with the hot fries. Season with extra salt and pepper if desired.
