Ingredients
- 1 lb beef steak
- 1 lb salmon fillet
- 1.5 lb potatoes
- 1 bunch asparagus
- 4 medium carrots
- ½ cup heavy cream
Instructions
- 1
Boil the 1.5 lb potatoes in salted water until fork-tender, about 15 minutes. Drain and mash with 2 tbsp butter and 1/4 cup milk (or use the cream from the sauce).
- 2
While potatoes cook, toss the 1 bunch asparagus and 4 sliced carrots with 2 tbsp olive oil, salt, and pepper. Roast at 400°F for 12-15 minutes until tender and lightly charred.
- 3
Season the 1 lb steak and 1 lb salmon with salt and pepper. Heat 1 tbsp oil in a skillet over high heat. Sear steak for 3-4 minutes per side for medium-rare, and salmon for 3-4 minutes per side until flaky.
- 4
Remove proteins from the skillet. Add 1/2 cup heavy cream and 1 tbsp Dijon mustard (if you have it) to the pan, scraping up browned bits. Simmer until slightly thickened, about 2 minutes.
- 5
Serve the steak and salmon with the mashed potatoes, roasted vegetables, and drizzle with the cream sauce. Garnish with parsley and lemon wedges if desired.
