Ingredients
- 2 large russet potatoes
- 3 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- 1 lb sirloin steak
- 1 tbsp butter
- 2 tbsp fresh parsley

Preheat oven to 425°F. Cut the 2 large potatoes into 1/2-inch thick fries and toss with 2 tbsp olive oil, 1/2 tsp salt, and 1/4 tsp pepper on a baking sheet.

Spread fries in a single layer and bake for 25-30 minutes, flipping halfway, until golden and crisp on the outside.

Pat the 1 lb steak dry and season both sides with remaining 1/2 tsp salt and 1/4 tsp pepper.

Heat 1 tbsp olive oil in a cast-iron skillet over high heat until shimmering. Add the steak and cook for 3-4 minutes per side for medium-rare, until a brown crust forms.

Reduce heat to medium, add 1 tbsp butter, and tilt the pan to baste the steak for 1 minute. Transfer to a cutting board and rest for 5 minutes.
