Ingredients

  • 12 sheets spring roll wrappers
  • ½ pound pork tenderloin
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 cloves garlic
  • 3 tablespoons hoisin sauce
  • 2 stalks scallions

Instructions

    Slice the 0.5 lb pork tenderloin into thin strips, about 1/4 inch thick. Mince the 2 garlic cloves and slice the 2 scallions thinly, separating white and green parts.

    In a bowl, toss the pork with 1 tbsp soy sauce and let marinate for 10 minutes while you prepare the wrappers.

    Heat 1 tbsp vegetable oil in a large skillet over high heat. Add the pork in a single layer and cook without stirring for 2 minutes until browned, then stir-fry for another 2-3 minutes until cooked through. Transfer to a plate.

    Reduce heat to medium, add remaining 1 tbsp oil and the minced garlic. Cook for 30 seconds until fragrant, then add the white parts of scallions and cook for 1 minute until softened.

    Add the cooked pork back to the skillet along with 2 tbsp hoisin sauce and remaining 1 tbsp soy sauce. Stir-fry for 1-2 minutes until the sauce coats the pork and it looks glossy.

    Warm the 12 spring roll wrappers in a steamer or microwave (covered with a damp towel) for 1-2 minutes until soft and pliable.

    Serve the pork with the warm wrappers, remaining 1 tbsp hoisin sauce for dipping, and sprinkle with the green scallion parts. Wrap the pork in the wrappers and enjoy.
