Ingredients

  • 6 large eggs
  • 2 cups fresh spinach, roughly chopped
  • ½ cup crumbled feta cheese
  • 1 clove garlic, minced
  • 2 pieces pita bread
  • 1 pinch salt and pepper to taste

Instructions

    Preheat oven to 375°F. Lightly oil a muffin tin or 2-cup ramekin.

    Heat a skillet over medium, add spinach and minced garlic, stir until wilted, about 2 minutes.

    Whisk eggs in a bowl with salt and pepper until fully combined and light.

    Divide wilted spinach and feta between cups or ramekin, pour egg mixture over top.

    Bake until eggs are set but centers still jiggle slightly, 12–15 minutes.

    Warm pita in the oven during last 2 minutes. Serve egg bites alongside pita.
