Ingredients

  • 2 cups fresh spinach
  • 6 large eggs
  • ½ cup feta cheese, crumbled
  • ¼ cup whole milk
  • 1 whole shallot, minced
  • 1 pinch salt and pepper to taste

Instructions

    Heat oven to 375°F. Add olive oil to a 10-inch oven-safe skillet over medium.

    Add shallot and cook 1 minute until fragrant, then add spinach and wilt, stirring, for 90 seconds.

    Whisk eggs, milk, feta, salt, and pepper in a bowl until well combined.

    Pour egg mixture over the spinach in the skillet, stirring gently to distribute evenly.

    Transfer skillet to oven and bake 6–7 minutes until edges are set but center still jiggles slightly.
