Ingredients

  • 8 large eggs
  • ¼ cup heavy cream
  • ¾ cup sharp cheddar, shredded
  • ½ cup diced ham or cooked bacon
  • 2 tbsp fresh chives, chopped
  • 1 pinch salt and pepper

Instructions

    Preheat oven to 375°F. Grease a 6-cup silicone muffin mold or standard muffin tin with oil.

    Whisk eggs and heavy cream together in a bowl until smooth. Stir in cheese, ham, and chives.

    Pour egg mixture evenly into muffin cups, filling each about three-quarters full.

    Bake for 12–14 minutes until set but still slightly jiggly in the center. Tops should be lightly golden.

    Cool in the pan for 1 minute, then pop out with a small spatula or knife. Serve warm or at room temperature.
