Ingredients

  • 1 sheet puff pastry
  • 10 oz frozen spinach
  • 4 oz feta cheese
  • 1 cup ricotta cheese
  • 1 large egg
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

    Thaw the 1 sheet puff pastry according to package directions. Preheat oven to 400°F (200°C).

    Squeeze the 10 oz frozen spinach to remove excess water. In a bowl, mix spinach with 4 oz crumbled feta, 1 cup ricotta, 1 tbsp olive oil, 1/2 tsp salt, and 1/4 tsp pepper.

    Roll out the puff pastry on a floured surface. Cut into 4 equal squares.

    Place a quarter of the spinach-cheese filling in the center of each square. Fold corners to the center and pinch edges to seal.

    Beat the 1 egg in a small bowl. Brush the tops of the pies with the egg wash.

    Bake for 20-25 minutes, until the pastry is puffed and golden brown. Let cool for 5 minutes before serving.
