Ingredients

  • 2 packages ramyeon noodles (Korean instant ramen)
  • 4 cups water
  • 1.5 tbsp gochugaru (Korean red chili flakes) or gochujang paste
  • 2 whole eggs
  • 2 whole scallions
  • 1 tbsp soy sauce

Instructions

    Bring 4 cups water to a rolling boil in a large pot over high heat.

    Add ramyeon noodles and cook for 3–4 minutes, stirring occasionally, until al dente.

    Stir in gochugaru (or gochujang) and 1 tbsp soy sauce until combined and the broth turns red.

    Create two shallow wells in the noodles, then crack an egg into each well.

    Cook for 2–3 minutes until egg whites set but yolks still jiggle slightly.

    Slice scallions, divide bowl between two bowls, top with scallions, and serve hot.
