Ingredients

  • 6 oz soba noodles (buckwheat)
  • 8 oz ground pork
  • 2.5 tbsp soy sauce
  • 1.5 tbsp chili oil or rayu
  • 3 cloves garlic, minced
  • 2 whole egg yolk

Instructions

    Boil soba in salted water until just al dente, about 4 minutes. Drain well.

    Heat 1 tbsp oil in a large skillet over medium-high. Add pork and cook, breaking into small pieces, until no pink remains, ~5 minutes.

    Add minced garlic to the pork. Stir constantly for 30 seconds until fragrant.

    Add cooked soba, soy sauce, and chili oil to the skillet. Toss vigorously for 2 minutes until noodles are golden and crispy in spots.

    Divide noodles between two bowls. Top each with one raw egg yolk.

    Serve immediately. Mix the yolk into hot noodles at the table.
