Spicy Pork Belly Salad

Crispy pan-seared pork belly slices tossed with fresh lettuce, red chilies, black beans, and green onions in a simple soy-sesame dressing. A quick, flavorful weeknight dinner that comes together in about 30 minutes.

Ingredients

  • 1 lb pork belly
  • 4 cups lettuce
  • 2 red chili peppers
  • ½ cup black beans
  • 3 green onions
  • 1 tbsp sesame seeds
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil

Instructions

    Slice the 1 lb pork belly into thin strips. Heat a large skillet over medium-high heat and add the pork; cook until browned and crispy, about 8-10 minutes, stirring occasionally.

    While the pork cooks, wash and tear the 4 cups lettuce into bite-sized pieces and place in a large bowl. Thinly slice the 2 red chili peppers and 3 green onions.

    When the pork is crispy, remove it with a slotted spoon and set aside. Pour off most of the fat, leaving about 1 tbsp in the skillet.

    Reduce heat to low and whisk into the skillet the 2 tbsp soy sauce and 1 tbsp sesame oil, scraping up any browned bits. Cook for 1 minute until fragrant.

    Add the cooked pork back to the skillet and toss to coat with the sauce. Remove from heat.

    Add the pork mixture, sliced chilies, green onions, and 0.5 cup black beans to the lettuce bowl. Toss everything together.

    Sprinkle with the 1 tbsp sesame seeds and serve immediately.
