Ingredients

  • 3 cups cooked rice (day-old, chilled)
  • 6 oz shrimp, peeled and deveined
  • 6 oz boneless chicken thigh or breast, diced small
  • 2 whole eggs
  • 2 tbsp sambal oelek or chili paste
  • 2 tbsp soy sauce
  • 3 whole shallots or green onion, thinly sliced

Instructions

    Heat 2 tbsp oil in a large wok or skillet over high heat. Add diced chicken, stirring, until no pink remains, about 4 minutes.

    Add shrimp, stirring, until they pink and curl, about 2 minutes. Push everything to the side of the pan.

    Pour beaten eggs into the empty space and scramble until just set, about 60 seconds. Fold in with the protein.

    Stir in chilled rice, breaking up clumps with the back of a spoon, for 2 minutes until grains separate and heat through.

    Add sambal and soy sauce, tossing constantly, until rice is glossy and evenly coated, about 60 seconds.

    Transfer to a plate and top with sliced shallots or green onion. Serve hot.
