  • 2 lb goat meat
  • 3 scotch bonnet peppers
  • 1 large onion
  • 1 red bell pepper
  • 3 tbsp vegetable oil
  • 1 tsp salt
  • 1 tsp black pepper

    Cut goat meat into 2-inch chunks. Blend scotch bonnets with 1 tbsp oil, salt, and black pepper into a paste.

    Coat meat with the paste; marinate at least 30 minutes, or overnight for deeper flavor.

    Preheat grill to medium-high. Grill meat, turning occasionally, until charred and cooked through, about 15-20 minutes.

    Meanwhile, slice onion and red bell pepper into strips. Heat remaining oil in a skillet over medium-high.
