Ingredients

  • 1 lb beef intestines (gopchang), cleaned and parboiled
  • 3 tbsp gochujang (Korean red chili paste)
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 3 cloves garlic, minced
  • 3 stalks scallions, cut into 2-inch pieces
  • ½ tbsp granulated sugar

Instructions

    Stir gochujang, soy sauce, sesame oil, garlic, and sugar in a large bowl until smooth.

    Add the cleaned intestines and toss to coat evenly. Let sit for 5 minutes.

    Heat a cast iron skillet or grill pan over medium-high until shimmering, about 1 minute.

    Working in batches, cook the intestines 3–4 minutes per side without stirring. Edges should char and crisp.

    Transfer cooked intestines to a serving plate. Scatter scallions on top.

    Serve immediately with rice and kimchi on the side.
