Ingredients
- 1 lb beef intestines (gopchang), cleaned and parboiled
- 3 tbsp gochujang (Korean red chili paste)
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 3 cloves garlic, minced
- 3 stalks scallions, cut into 2-inch pieces
- ½ tbsp granulated sugar

Stir gochujang, soy sauce, sesame oil, garlic, and sugar in a large bowl until smooth.

Add the cleaned intestines and toss to coat evenly. Let sit for 5 minutes.

Heat a cast iron skillet or grill pan over medium-high until shimmering, about 1 minute.

Working in batches, cook the intestines 3–4 minutes per side without stirring. Edges should char and crisp.
