Ingredients

  • 1 lb beef sirloin or tenderloin, cut into 1.5-inch cubes
  • ½ cup coconut milk
  • 2 tbsp fresh ginger, minced
  • 1 tsp coriander powder
  • ½ cup fried shallots (store-bought or homemade)
  • 1 whole lime
  • ¼ cup fresh cilantro, chopped
  • 2 tbsp neutral oil for cooking

Instructions

    Toss beef cubes with coconut milk, ginger, coriander, salt, and pepper in a bowl.

    Thread beef onto metal skewers, packing tightly without crowding the metal.

    Heat oil in a large skillet over medium-high until it shimmers, about 90 seconds.

    Sear skewers 2 minutes per side without moving. Beef should be golden brown with slightly charred edges.
